Huli Huli Chicken, featured on Gordon Ramsay’s “Uncharted,” is a Hawaiian dish known for its sweet, savory, and tangy marinated chicken, grilled and frequently turned for a caramelized glaze, exemplifying the local culinary culture. Huli means to turn over in Hawaiian and it is flipped back and forth over local kiawe (mesquite) wood.
